Kerala is not one trip — it is three, and most people only take one

You land at Cochin International, clear baggage, and the driver takes you across the Thevara bridge to Fort Kochi in about forty minutes. The afternoon is a slow walk: the Chinese fishing nets at Vasco da Gama Square, still operated by hand and still catching fish; St Francis Church, the oldest European church in India, where Vasco da Gama was first buried before Portugal asked for the body back; and Mattancherry, where the Dutch Palace murals and the Paradesi Synagogue — active, 450 years old, with Chinese floor tiles — sit a hundred metres apart. Jew Town is the lane between them, and the pepper and cardamom godowns still smell exactly like the reason Europe sent ships this way.

The evening is a live Kathakali performance at the Kerala Kathakali Centre on KB Jacob Road. Arrive an hour before the 6 p.m. show and you watch the artists build the green face paint, layer by layer, the entire application taking longer than the performance. Do not skip this; it is one of the few classical forms in India where you sit close enough to read the eye movements, and the actors explain each gesture as they go.

The 130-kilometre drive north-east takes about four hours and earns every minute. The road climbs through rubber estates, then suddenly through cardamom and pepper — stop at a working plantation en route and the guide will pull a green cardamom pod off the stem and hand it to you, which explains in three seconds why Portuguese ships came. The Cheeyappara and Valara waterfalls are on the main road and worth a ten-minute stop each: twin cascades that drop in white curtains over granite. The Karadipara viewpoint above the Idukki gorge comes next, with the reservoir four hundred metres below.

Munnar itself sits at 1,600 metres. You arrive mid-afternoon as the mist starts coming in from the Tamil Nadu side and the Kannan Devan tea estates fill the view from the car window. Tonight is early: dinner, a walk on the main market road, and the understanding that tomorrow starts before eight.

A full day on the high range. Mattupetty Dam is the first stop — a short speedboat run on the reservoir before the tourist coaches arrive. Echo Point and Kundala Lake follow, and then the road climbs further to Top Station at 1,700 metres, where the view drops down in two stages into Tamil Nadu and the Western Ghats run out of mountain. Come back into Munnar by early afternoon.

In town the KDHP Tea Museum runs its original rolling and drying machines. The guide takes twenty minutes, the machines take twenty minutes, and the tasting at the end is the best thirty minutes in Munnar. Buy a kilo of the orthodox-grade leaf, not the dust that travels home in fancy tins. The rest of the afternoon is a walk through a picking line — ask the hotel front desk for the nearest estate that allows it.

Three hours south through Kundala and Poopara, the road descending into the cardamom hills. You arrive at Thekkady around noon. The Kerala Forest Department runs boat cruises on Periyar Lake at fixed government slots — the 2 p.m. cruise is the most reliable for wildlife on the far bank. Herds of sambar and gaur come down to the drowned tree line that marks the old forest floor; elephants appear two days in three, which is an honest figure rather than a promise.

The evening is a Kalaripayattu demonstration at one of the town's training centres — the form is older than any other Indian martial art and the footwork alone is worth forty minutes. Dinner back in town. Ask for a Kerala restaurant that does the full saiva sadya, and order the red rice version if it is on the board.

Four hours west through rubber and coconut, the land flattening as you leave the hills. You board a private kettuvallam at Punnamada jetty around noon, and the boat casts off immediately. The afternoon is the canal system at its quietest: Kuttanad's paddy fields, farmed nearly two metres below sea level, run past the windows while lunch is cooked on board. Ask for karimeen pollichathu — pearl spot fish wrapped and grilled in banana leaf — and then ask again what the vegetarian version of that treatment is, because the technique works just as well with raw banana. The boat anchors at dusk; no houseboat moves after dark by law.

Breakfast is on board next morning. Stay on deck as the early fishermen take the canal; the light at 6 a.m. on the Vembanad is the thing most people photograph and nobody can actually describe.

Disembark after breakfast and the car goes south for about four hours through Kollam and Varkala. The Varkala cliff — 30 metres of red laterite above an open beach — is worth a twenty-minute stop if your driver takes the coast road. Kovalam is three crescents of beach; the southernmost one, Lighthouse Beach, is the most sorted, with the 1972 Vizhinjam lighthouse open to climbers until 5 p.m. Sunset here is a clean drop into the Arabian Sea with nothing between you and Oman.

The rest of the evening is yours on the beach. Kovalam has a row of rooftop restaurants above the surf line; the menus are long and the kitchens manage a decent vegetarian Kerala thali by request.

A half day in Thiruvananthapuram, 16 kilometres north. Sree Padmanabhaswamy Temple is the one with the dress code: men must wear a mundu, women a saree or half-saree; both are available from vendors at the gate for a few hundred rupees. The Napier Museum next to the Government Arts and Crafts College is the reward for making the temple effort — a wood and brick pavilion in Indo-Saracenic style with a collection of Kerala bronzes and ivory that gives the whole state context.

The afternoon is a backwater boat at Poovar, 25 kilometres south of Kovalam, where the Neyyar river, the backwater and the open sea meet across a single sandbar. The boat crosses all three in about an hour. Evening is free on Lighthouse Beach — last dinner, last sunset.

Breakfast at leisure. The airport transfer from Kovalam to Trivandrum International takes 25 minutes on a clear morning. If your flight is after 2 p.m. the driver can hold at the hotel until noon and add a stop at the Chalai bazaar — the city's wholesale spice and textile market — on the way. Cardamom and dried coconut are the things that actually survive the customs declaration at Indian airports, so buy those and skip the wood.
