Land at Tan Son Nhat and transfer twenty minutes into District 1. The evening is free: Nguyen Hue walking street runs from the People's Committee building to the river and is closed to traffic, and the rooftop bars on Bitexco tower look straight down it. Saigon eats late, so nothing shuts early.

Ninety minutes north-west to Cu Chi, where 250 km of hand-dug tunnels held a district through the war. A short stretch has been widened for visitors and you can crawl 40 or 100 metres of it, which is enough to understand the rest. Back in the city for the War Remnants Museum, the Reunification Palace and Notre-Dame Cathedral with the old Post Office opposite.

South-west through the rice country to Cai Be, where you swap the car for a sampan and thread the coconut canals to a workshop making rice paper and coconut candy. Lunch is at a delta orchard house with elephant-ear fish and river prawns, and there is a vegetarian set on request. Continue by road to Can Tho on the Hau river for the night.

Out on the water by 5.30 for the Cai Rang floating market, where wholesalers hang a sample of what they sell from a bamboo pole above the boat. Coffee and a bowl of hu tieu are served from a boat that pulls alongside. Back for breakfast, then the road to Rach Gia or Can Tho airport and the short flight to Phu Quoc island.

A speedboat day through the An Thoi archipelago off the southern tip — snorkelling over the coral at Hon Mong Tay, a swimming stop at Hon Gam Ghi and a seafood lunch cooked on board. Fishing tackle is handed out on the return leg and whatever you catch is grilled for you at the last stop.

The Hon Thom cable car runs 7.9 km over open sea, the longest such ride anywhere, with fishing villages and moored boats directly under the cabin. The island at the other end has a water park and a quiet beach. In the evening you walk the Kiss Bridge at Sunset Town and stay for the nightly multimedia show over the water.

Nothing scheduled. Long Beach faces west so the sunsets are the reason people come back, and the pepper farms and fish-sauce distilleries inland make an easy half-day if you want one. The night market at Duong Dong opens at five and is the best-value seafood on the island.

Yes, because it is a working wholesale market, not a show. Trading peaks between 5.30 and 7 and is largely over by eight, which is when the tourist boats arrive and there is nothing left to see.
The site itself is a flat forest walk with a guide and is easy. Going into the tunnel is entirely optional — it is a crouched crawl in warm, close air, and most people over sixty skip it and wait at the exit, which is fifty metres away.
Because the first three days of this trip are dense — tunnels, museums, a delta night and a 5 am market. Four unhurried beach nights at the end is what makes the front half bearable, and Phu Quoc is cheaper per night than Da Nang or Nha Trang.
